I made this for dinner for Richard and myself on Friday night. It literally only took 30 minutes and it made enough food for a small army! I still have a bunch in my fridge. After two heaping plates on Friday, a bowl for a late night snack after the show, a two giant omelets filled with the stuff on Sunday before going to Grandma’s, I can’t believe that there is more! And the best thing about it is that I am not tired of it yet! Its soooo good. I can’t wait to try it with other veggies. I told Richard, “Now that I know how to make my own curry, you’re never going to get me to stop!” Curried everything! YUM!
